From Old Pit to New Flames

Smoky traditions continue in Austin with the opening of a new barbecue outpost, Bird Dog Pit BBQ. The delicious smoke started billowing on July 1 as it took over the urban space once occupied by Pit Barbecue at 4707 Burnet Road, Brentwood neighborhood.

This gastronomic torch passing preserves a beloved Austin barbecue mainstay that had been in operation since 1970. The eatery is now taking up the reels to serve up timeless barbecue classics and new age innovations.

Classic Smokehouse Delicacies

Bird Dog Pit BBQ brings to customers an array of traditional smoked meats. A lineup including brisket, ribs, chicken, turkey, and sausages are available either as plates or by the pound, and can also be enjoyed in sandwiches.

Other quintessential barbecue dishes like Frito pie, beef-loaded baked potatoes are on offer, with sides like Hatch chili mac and cheese, pinto beans, coleslaw, and potato salad. Not forgetting to leave some room for their scrumptious desserts including peach cobbler and banana pudding.

An exciting future menu enhancement announced by Pitmaster Rudy Rivera III is the introduction of wild game dishes and more plant-based side options.

Beers in the future

Besides mouth-watering food, Bird Dog Pit BBQ has plans to serve beer and wine at a later date. They have also shown strong interests in offering catering services, along with renovating their physical space to cater to more demands.

Paws and Pits

Bird Dog Pit BBQ stands as a venture between Rivera and his business partner Kati Luedecke. Both are co-owners of Bottega, an Austin Italian-ish café.

The barbecue joint gets its name in honor of Rivera’s dog, Charlotte, and his past hunting background. The establishment in Burnet Road retains some family legacy as Rivera took over from his uncle, Orlando Arriaga, who operated the previous barbecue spot Big O’s Pit Barbecue.

Hours of Operation

The joint opens its doors six days a week from 11 a.m. to 7 p.m., Monday through Saturday. Various services such as in-person takeout orders, DoorDash pickups, and deliveries are available along with indoor and outdoor dine-in facilities.
